Foodie Friday – Philly Cheese steak Sloppy Joes

Sorry I’ve been quiet!  I’m a crappy blogger.  Maybe this recipe will make it up to you!

I like Sloppy Joes…my hubby does not.  We were at the gun range with some friends and got into a discussion about them, and they introduced us to the Philly Cheese steak Sloppy Joes.  They’re a tasty twist on the traditional recipe!

Ingredients
1 lb ground beef
1 onion
1 green bell pepper
1 cup beef broth
A1 steak sauce
Salt and pepper to taste
Provolone cheese
Buns

Directions
1.  Sauté the bell pepper and onions in olive oil for 5 minutes.

2.  Add the ground beef and cook until no longer pink.

3.  Once the ground beef has been browned, add the beef broth, steak sauce, salt, and pepper.  I also add some chili powder and garlic powder.

4.  Simmer until the liquid is almost gone.

5.  I toast the buns, add a little mayo, and spoon the meat onto the buns.  Put a slice of provolone cheese on top, put the sandwich into the oven to melt the cheese a bit.

These are a quick and easy dinner!  Hubby suggested that next time I get hoagies so it’s more like an actual Philly cheese steak sandwich.

I had an absolute blast in Jacksonville at the 26.2 with Donna half marathon and will have my recap up this weekend.  My next half marathon is the Georgia Publix half marathon at the end of March, so after a week of recovery I’m gonna hit the pavement next week.

Weekly Workout x2 : Jan 26 – Feb 9

So I haven’t done one of these in a couple of weeks…high time I got on it, dontcha think?

So I had to break this run in half…I decided to leave Guinness out of his crate for another test run to see if he behaved himself….nope!  Came home to Guinness shredding one of hubby’s work notebooks (thankfully nothing was written in it).  Then I went out to finish it, and my Garmin died at 3.25 miles done.  So I used my Nike+ app for the remaining miles.  I was overall pleased with this run!

Yep…a week between runs…not ideal.  We were going to dinner to celebrate a friend getting a new job so I squeezed in a one mile run before we went out.

Another week…ugh…I had plans to go out for 8 miles as my last long run before the Donna, but my phone died and I didn’t like being out there without a phone in case something happened…but I think with the walking I did afterward I hit 8 miles…just not all running.

I’m now in taper mode for the Donna…and honestly, I’m a little glad.  I have been dreading my training runs lately and I hate that.  If I could go into distance races without training I think I would, but I know that’s not possible.  I’m hoping for a good run at the Donna and then have a month before my next half, the Georgia Publix half marathon on March 23rd.  I’m debating on doing a half in April that happens where I do all of my long runs….I know the course well…I just don’t want to get burned out with long runs again like I did last year.  Le sigh.

It looks like I’ll have some time to do some catch up posts this week…they’re forecasting more winter weather for Georgia Tuesday – Thursday.

What do you do to motivate yourself to get out there when you just don’t feel like it?
