Foodie Friday – Spaghetti Squash

I am going to start a weekly post about recipes that I’ve either come up with on my own or found (and I will always give credit to where I found it).  I’ll also add a button to my toolbar for easy access to all the recipes I post!

This week I’m going to share a spaghetti squash recipe.  I absolutely LOVE this vegetable.  It’s a great alternative to pasta and it still give you that feeling like you’re eating a plate of spaghetti with less carbs. 

If you’re like me, you enjoy browsing through Pinterest, checking out all the cute craft projects and yummy food you can make.  I was searching for some inspiration for dinner a couple of weeks ago and stumbled upon a recipe by The Comfort of Cooking for a skinny spaghetti squash alfredo. 

I generally stay away from alfredo sauce because it is so high in calories, but this recipe really cuts down on them, and I thought it was more delicious than a normal alfredo sauce!

I did not think to take pictures during the cooking process, but I wlll share one from her website

Skinny-Spaghetti-Squash-Alfredo (3)

Here is the recipe -

INGREDIENTS:
1 medium sized spaghetti squash
1 tablespoon butter
3 garlic cloves, finely minced
2 tablespoons flour
1 1/2 cups milk (fat free)
1 tablespoon cream cheese or Neufchatel cheese
1 cup freshly grated Parmesan cheese, plus 2 tablespoons for topping
1/4 teaspoon Kosher salt
1/8 teaspoon freshly ground pepper
crushed red pepper flakes and fresh parsley for optional topping

DIRECTIONS:
Preheat oven to 350 degrees F.

First, prep the squash.  Cut spaghetti squash in half using a large sharp knife, scoop out the seeds (I used an ice cream scoop) and place cut side down on a rimmed baking sheet covered with water.  Bake until tender, about an hour.  OR, poke a few holes deep into the whole squash with a paring knife.  Bake for 60 minutes, remove from the oven and let rest for 10 to 20 minutes before slicing in half with a large serrated knife.  Scoop out the seedy insides leaving the spaghetti strands.

Once squash is cooked, use a fork to gently scrape the “spaghetti” strands into the center.

For the sauce, melt the butter in a small pot over medium-low heat.  Once hot, add garlic and saute for 1-2 minutes.  Whisk in flour, cooking for another minute while stirring.  Whisk in milk until no lumps remain.  Once hot, add cream cheese and stir until smooth.  Remove from the heat.  Stir in Parmesan, salt, and pepper.

Spoon sauce equally into each spaghetti squash half.  Gently pull up the spaghetti strands to coat as much as possible with the sauce.  Top with extra Parmesan and place under the broiler of your oven for 2-3 minutes or until golden and bubbly.

Top each half with a pinch of red pepper flakes and fresh chopped parsley, if desired.  Serve hot.  Makes 2 large servings or 4 side dish servings.

Hubby and I both enjoyed this.  Instead of serving them in the “shell”, I spooned the strands into a bowl and mixed the sauce with it.  I think next time I will only use 1 cup of milk as the amount in the recipe seemed to make the dish quite soupy.

Hawaii – Days 1 and 2

I know this is a fitness blog, but I'm going to trickle in a few posts about our Hawaiian vacation, complete with a race recap for the Seabee 10k run I did while I was there :)

February 4

We were up bright and early to head to the airport...we had a 10:50 a.m. flight to LAX where we would catch our connecting flight to Kona, Hawaii!

We picked up our luggage and rental car and headed to our hotel for the week, the King Kamehameha hotel.  We checked in and headed across the street to Splasher's Grill for some dinner.  When we travel, I do a lot of searching on TripAdvisor to find good places to eat, and this restaurant came highly recommended.  J had the fish tacos and I had a burger and fries, along with a couple of beers.  We enjoyed our dinner and asked to look at the breakfast menu...it didn't take us long to decide this would be our breakfast spot for the week.  We stayed up as long as we could and then went to bed.

February 5

Still not adjusted to the 5 hour time difference we were awake by 5 a.m.  I headed to the fitness center to get a run in (yes, I know I was in Hawaii but I didn't know where I could run, so I chose the safer route).  We headed back over to Splasher's for breakfast.  I had the Macadamia nut pancakes and J had the stuffed French toast.  Both were delicious!

We wanted to do a tour at the Kona Brewing Company, and it didn't open until 10:30, so we drove around until 10, thinking that we would still be able to get in.  Nope!  The sign up sheet was already full!  We hung around until that tour left, put our names on the list for the 2:00 tour, and headed out to explore.  We wanted to check out a coffee plantation, so we found Mountain Thunder Coffee and did a tour.  Their plantation is at an elevation of over 3200 feet, making it the highest coffee plantation on the island.  We went through and saw the whole process the coffee beans go through.

Afterward, we drove back down and had lunch at Pine Tree Cafe, a little place that J found on Yelp.  We had a tasty and cheap lunch!

Once lunch was over, we headed back to Kona Brewing Company for our tour.  We have eaten at the one on O’ahu before and wanted to check out the original location.  They handed out a page with their beer list as well as the brewing process on it.

Our guide took us through the facility and explained everything.  Did you know that the grain that was used to brew the beer is also used in their pizza crusts, as well as fed to pigs on farms around the island?  They are really making an effort to be green!

They are also using some wooden barrel to age some beer in.  I know J was bummed it wasn’t ready for us to try!

After the tour was over, it was time for everyone’s favorite part – FREE SAMPLES!!

J’s favorite was the Black Sand Porter…mine was the Wailua Wheat.

Once the tour was over, we headed back to the hotel to relax before heading out to find some dinner.  Our hotel is right in the heart of where the Ironman Kona triathlon starts and ends – this sign was by the small beach next door -

We walked along Alli Drive and came across the Fish Hopper Grill, so we decided to check it out.  To say we were underwhelmed would be an understatement.  I wouldn’t recommend it to anyone!  J had never seen purple sweet potatoes before…they were tasty!

Once we wrapped up dinner, we headed back to the hotel to head to bed – we were leaving SUPER early in the morning to head to Kilauea – Hawaii’s active volcano!

April Goals

T-minus 5 months until I head to California to participate in the Inaugrual Dumbo Double Dare at Disneyland!  I am so incredibly excited about this race, but also a little nervous with how little running I have done since the Disney Princess half marathon and the Georgia Publix half marathon.

That being said, I am going to start making small, attainable goals for myself, posting them here, and then debriefing at the end of the month with how I have done. 

1.  Blog 3-4 times a week

I feel like since my races have been over I haven’t been as active of a blogger, and I want to change that.  I am going to start adding more weekly blog posts (Foodie Friday coming this week!) and since my training for the Dumbo Challenge is about to kick into full force, catching you guys up on how it’s going.

2.  Run 3x a week

As I mentioned, I want (and need) to pick up my pace and improve my time in my races.  I will make it an effort to do two short runs during the week and a longer run on the weekends.

3.  Pack mine and hubby’s lunches 2-3 times a week

We have gotten in the habit of eating out for lunch, and that adds up not only on the credit card, but on the scale.  I plan to pack healthy and tasty lunches for us to have at work instead of grabbing something fast.

4. Get up better in the mornings

If you don’t already know me, I am NOT a morning person.  I will hit the alarm until the last minute when I have just enough time to jump in the shower, throw my hair back, toss on some clothes and get out the door.  I want to have time to get ready and stop for a coffee on the way to work and not have to worry about getting into traffic or behind a slow driver.

I realize these aren’t all fitness goals, but we all have areas in our lives where we want to improve, and ultimately these will all benefit me in the end.

Happy Birthday to my Blog + A Giveaway!

Sunday as I was lounging around the house, I started thinking about my next blog post and I realized that the first post I did was close to a year ago.  I went back to the beginning and saw that my first post was a year ago today...March 26th, so Happy Birthday to my blog!

You've probably noticed that my blog also has a new look!  I've been wanting to do this for awhile, and what better time for a fresh new look than today!  I want to give a big thanks to Bethi over at Disney Mommi for helping me out with it.  I love it and hope you do, too! Remember in my race recap of the Georgia Publix half marathon when I asked if you liked my headband?  Well...I have a giveaway for you!
