Foodie Friday – Food Trucks!

There is a reason I didn’t have a Weekly Workout post this week – I didn’t work out.

Plain and simple.

On June 6th hubby and I spent 4 hours at the pool, and my smart self did not put on sunscreen.  I.Was.Torched.

It hurt to have clothes on…it hurt to move.  So I did not run or go the gym all week.

This week my back has been bothering me, but I hope to get a run in this weekend as I have the Peachtree Road Race in 2 weeks!

So this week for Foodie Friday I’m serving up something different…food trucks!

They seem to be popping up in major cities, and I, for one, love them.

It’s such a fun way to try new things and it makes for a fun night out!  Thursday nights are the “food truck” night in a city close by and that’s where we head.  I lovingly call it “Food Truck Thursday” :)  We went both last week and this week with some friends and had a great time.

This week I totally forgot to take pictures of our food, but trust me, it was tasty!

Each week they post on their Facebook page what food trucks will be there that week.  Generally there are around 7-8 trucks along with 2-3 dessert stands. 

Last week we had empanadas from On Tapa the World…they were soooo good!

The one on the top is chicken and on the bottom is beef.  The beef was definitely the favorite with my hubby and I.  The chicken could have used more seasoning, and the green sauce was so good to dip them in!  Next time I want to try to Broccoli and Cheddar empanada.  They make them fresh to order so they were piping hot when we got them.  I’m ready for them to come back!

We also got some food from the WOW Truck.  This truck was voted #1 best food truck in Atlanta, and it also had a little cameo in the movie “What To Expect When You’re Expecting”.

They have a large hearty menu, but hubby got the Kwanzaa Bowl, which had smoked pork on a bed of potatoes, topped with shredded cheese, their “kicky” sauce, and BACON

Our friends got the Smoky Bowl – smoke pork on a bed of roasted potatoes, cheddar cheese, their house made barbecue sauce, and chipotle cream.  They gave it two thumbs up!

I got two of their arepas, which are griddled corn cakes stuffed with something :)  I got one stuffed with brisket and the other with tomato, basil, and mozzarella.  The brisket was lacking of seasoning but the TBM was very good!

This week hubby and I shared a bowl of BBQ mac and cheese from the Mac the Cheese truck.  We were a little underwhelmed by the type of cheese sauce they used.  Next time I want to try their Spinach and Artichoke mac and cheese…it sounds delish!

We also had a pork taco, beef taco, and sesame fries from the Yumbii truck.  We tried this truck out last year and really enjoyed it, and they didn’t disappoint this year.  The fries are super good with the sesame oil on them.

If you live in the Atlanta area, check out where these awesome food trucks are and have a family outing.  The Alpharetta Food Truck Alley happens every Thursday night from 5-9 p.m.  I know we’ll be going back many times this summer with our friends.

Weekly Workouts – June 2-8

Sorry this is late!  I forgot to publish it last night.

I had another productive week…hoping that I’ve finally gotten into a groove of working out :)

Monday
1 mile walk around the neighborhood with hubby and Guinness

Tuesday
2 mile run with Guinness
6.2.2014

Wednesday
Tried yoga for the first time tonight!  Also ran 1 mile for National Running Day

Thursday
Was supposed to do 2 miles, but a storm rolled in and only got one done with Guinness

Friday
Rest

Saturday
Pool day followed by an impromptu trip up to see my parents at their cabin

Sunday
1 mile walk with my parents and Guinness where we came across a turkey and an alligator snapping turtle

I am usually so diligent about putting sunscreen on, but what did I not do on Saturday?  Yep..you guessed it!!  The front side of my body is torched and it hurts to move.  I’m hoping the pain goes away in a couple of days so I can get back to my exercises without being in pain!

Foodie Friday – Corn Dip

A few weeks back we went to a friend’s house for a cookout, and she made this really tasty dip!  Hubby really liked it so we got the recipe from her to make it at home.  It’s SUPER easy and great for the summer!

Ingredients
FF1

2 cans chipotle white shoepeg corn, drained
2 cans black beans, rinsed and drained
1/2 cup apple cider vinegar
1/2 cup olive oil
1/2 cup sugar or Splenda
scallions, chopped
8-10 oz feta cheese

Directions
Dump everything into a large bowl and mix together.

Refrigerate and enjoy cold with Tostitos Scoops!

I personally don’t think you need that much sugar.  I only put 1/4 cup in this batch.  It sweetened it up a little but not too much.  I can’t wait to munch on this over the weekend!

You could also add tomatoes to it (hubby isn’t a huge fan of tomatoes so I kindly left those out).

Tails on the Trails 5k recap

Last Saturday Guinness and I headed to Tribble Mill Park in Lawrenceville to run our very first 5k together!

Since it was going to take us close to an hour to get there, I wanted to make sure we weren’t rushing and had plenty of time.  Guinness was not feeling the 6 a.m. wake up call -

A little background on the organization from their website -

You lucky dog rescue is a IRC 501(c)(3) non-profit organization dedicated to the rescue of homeless and abandoned dogs from the high-kill shelters of North Georgia.

We believe it is our moral responsibility to save, protect, and improve the lives of these dogs through the help of committed volunteers, foster homes, donors, local veterinarians, and trainers. We strive to re-introduce these dogs to society, assess their individual needs, and provide them with a loving temporary home while matching them with only the best, carefully screened forever homes.

I have volunteered for this amazing organization a couple of times and hope to do so more in the near future.  The dedication of the volunteers and fosters is impeccable and I was happy to participate in a race that gave back to a cause that I feel so strongly for.

The race was super easy to get to and very well organized.  Guinness and I met up with my friend, Ramona, her boyfriend, and some of her friends from their weekly running group.  We chatted a bit and then headed to the start line.  Guinness and I started toward the back so we didn’t get in the way of those running solo.

And we were off!  The course was very shaded, but quite hilly.  I did enjoy the course though.  Guinness did great!  He’s still learning how to run on the leash and needs a little guidance, but that comes with time.

Ramona was nice enough to snap some pictures of us making our way to the finish line (and we were running even though it looks like we’re walking) :P

Once we finished we hung out in the shade for a bit.

Ramona was pretty sure that she placed in her age group, so we headed up to the pavilion to hear the winners announced.  Ramona got 2nd in her age group, and Guinness and I placed 3rd in ours!

After the race we headed home, but not before a stop to get Guinness a special treat – a celebratory beer!

The race had a great race packet, and I really loved the race shirt!

They even included a treat for the pups :)

Weekly Workouts – May 27-June 1

I had another decent week of activeness :)

Tuesday
1.5 mile family walk around the neighborhood

Wednesday
30 minute arm workout in the gym followed by a very humid one mile run with Guinness when I got home

Thursday
Rest

Friday
2 mile run on the treadmill

Saturday
Guinness ran his first official 5k with me!  Blog post coming later this week

Sunday
Rest, did work around the house

I’m ready to gear up for another week, and I’m hoping to try something new! (Eeek!)
