Foodie Friday – Beef Stroganoff

As a wedding gift, my mom gave me a handwritten cookbook of some of our favorite recipes that she made while we were growing up.  Unfortunately, the pages of the book came unglued from the spine, so she took the book back to rewrite everything in a new one.

Fast forward to last Christmas – I got a new cookbook from her, and it was absolutely perfect.

FF1 I love flipping through it, looking at the recipes and having good memories about them.  I haven’t even brushed the surface with making them all, but I will share a few with you guys!

Tonight I wanted something pretty easy.  For whatever reason I was exhausted all day today, and I knew I still had to run to keep my commitment for the week, so the last thing I wanted to do was slave in the kitchen.  I remembered a recipe for beef stroganoff that would be good, so that’s what I made!

Ingredients
1 lb ground beef (I used 90/10)
1 can cream of mushroom soup (I used 98% fat free)
1 small onion diced
8 oz sour cream (I used light…you could also substitute Greek yogurt)

Directions
Brown ground beef and drain.  Set aside.

Place soup and onions in a skillet, adding enough water to make mixture soupy.  Cook on medium heat until onions are tender (You may need to add more water)

You can serve this with rice or egg noodles.  I like to use No Yolk.  Cook whichever you’re serving during this time.

Add the ground beef to mixture and simmer for 5-10 minutes.  I seasoned mine with salt, pepper, garlic powder, and chili powder.  Remove from heat and add sour cream.  I mix the noodles in with the meat mixture.

I have been craving some lima beans, so I served that as my side, and the hubby got green beans.

It’s almost like a Hamburger Helper without the prepackaged mixes they come with.  It’s a nice hearty dish that’s super easy to make!

  5. I sd a similar recipe book when my cousin got married. I passed a cookbook around to different family members to write their favorite recipes. Gift was a huge hit.
